Lots of salad
Here are some of the salads we’ve had.

Happily, we’ve still got enough spinach and romaine to see us through this week. The baby belle radishes are gone, but I’ve still got some turnips and another daikon.
Eggs!
We’ve made brownies and scrambled eggs so far. The scrambled eggs were so good! These are a real CSA treat. Fresh eggs turned scrambled eggs into a gourmet meal. I hope to be able to have another scrambled egg and salad meal soon. You know that the eggs are great when you don’t want to make any more brownies because you’d rather have more scrambled eggs!
Apple rings, take 2
I tried baking apple rings again with two of the apples. Once I figure this out, I think they’re going to be really good. This time, I only sprinkled lemon juice and cinnamon on top. They definitely don’t need the extra sugar.

step 2: place on greased sheet, sprinkle with lemon juice and cinnamon

step 3: bake at 425 for several minutes (a couple less than I did, maybe!)
I think the problems lie mainly in the uneven sizes of the rings – the thinner portions burn up. That’s hard to fix by hand, although I’ll try to be more careful next time. I’m also going to try greasing the pan more evenly to see if that helps. I also may leave off the lemon juice.
Sweet potato tragedy
I left two little sweet potatoes too long in the microwave, and they ended up unedible. We were very sad.

Note to self: 2 x 3 minutes is too long!
I thought I’d reduced the time enough(2 x 3 mins vs. 2 x 5 mins), but next time I’m going to microwave the little guys even less. Thankfully, we still have one big sweet potato left.
Kale with raisins and pine nuts photos
It’s not so bad – even for people who aren’t too fond of kale.

Saute raisins and pine nuts in olive oil until nuts are brown. Remove.

Saute freshly washed (but not dried) kale in more olive oil until wilted. Return raisins and nuts, salt to taste, and serve.
