Here’s what arrived in our CSA box earlier this month:
Seems like summer, huh? We cooked the green beans Southern-style and stir-fried the squash in some local corn meal.
Where’s the tomato? Glad you asked. This was Wednesday’s lunch…
This eating better, eating local thing doesn’t have to be all or nothing. Take-out pizza or roasted chicken from Publix with local veggies is also a good combo.
The other half of the red tomato went into this late night tomato-arugula-Parmesan pasta.
The green tomatoes basically sat on my table until they became red tomatoes. I cooked them today with onion and garlic and the ends of celery (shown below), some rosemary, pancetta, corn grits, and vegetable stock. The best of pantry eating!
The ground beef makes excellent chili. It’s lean so it doesn’t get all greasy. Mmm… chili.

Vegetable stock is always nice to have around.
