Recently, we’ve been making yummy desserts with fruit.
So far, we’ve made
- mini peach cobblers with vanilla ice cream
- fig compote and rosemary granola with vanilla ice cream
- poached Asian pears with vanilla ice cream
(Okay, so there’s a pattern here.)
These desserts are fun to make and eat. They’re especially nice after a supper of summer vegetables. When supper’s not so heavy, dessert is more fun to dig into. And have another glass of wine with.
Peaches!
The mini-peach cobblers are a repeat from this post. Easy and yummy. They also make a good breakfast with yogurt.
Figs!
The fig compote I found here. I followed the recipe except for halving the sugar.
The rosemary granola is interesting and immediately made me think of dessert rather than breakfast. Rosemary’s supposed to be good for your memory, though, so maybe a morning dose would be a good thing.
I made the compote and then tossed the granola in with the sauce until it was all coated. It made a nice combination of flavors and textures.
Asian Pears!
I poached the Asian pears in the oven according to this recipe. I made a half recipe of the sauce and then halved the sugar again. So I started with three cups of boiling water and half a cup of sugar. I didn’t have all the spices, but I did have a jar of Chinese Five Spice Powder, which had most of the flavors on the list, so I used a couple of teaspoons of that instead.
And next time, I’ll add the tea in some cheesecloth or something. The leaves stuck to the pear halves. Not a disaster, but easily prevented.
This was really good. Chris even liked it, and he tends to be dismissive of non-chocolate desserts.
So play with your fruit! Think of it as an excuse to eat more ice cream.
