My plums from last week became individual plum upside down cakes from Simply Recipes.
First, I sliced the plums.
Then I peeled them. Probably should have reversed these two steps.
My plums were very ripe because I’d left them on the table since Wednesday. So they weren’t slices as much as mush. Good mush, though.
I needed three servings, so I used some larger soup dishes instead of the recommended ramekins.
Then I added the batter and put them in the oven.
I thought the cakes were way too sweet, though – teeth-achingly so! I’m cutting the sugar in half next time and won’t be surprised if it’s still plenty sweet.
And, oh yeah, the peaches became muffins after all.
